Stalling Out

Today I made “Poor Man’s Burnt Ends”. This was the first time I have ever attempted to smoke beef. I was loosely following this recipe.  I started the beef around 9am at 225. The plan was to wrap the beef when the temperature reached 265. At 2pm, it had reached 261 and an hour later it was still at 261. This is how I learned about temperature stall out in BBQ. I ended up wrapping the meat and increase the temp to 275.  From there, I pretty much followed the recipe. The flavor ended up great but some of the meat was a bit tough. I think next time I will need to start it a bit earlier and keep it low and slow to get it more tender. 

 

All in all, I enjoyed making the burnt ends and they tasted great. I hope that next time I can get the end result to be a bit more tender. I will also try and get a picture next time. It turns out that  I did not take a picture before the kids ate and they finished it all.
